Coconut and Date Slice

So yummy! If you are a fan of coconut like I am then this is too easy to whip up and is so fantastic, a lovely soft texture and full of coconut flavour - I literally craved and went to the tin just then for one as I typed! - my daughter was able to help in almost all the process of making this as well and feels so proud of herself now. I will be making this often- particularly when my husband eats 16 or so in a row at a time!

"This is a super easy, quick, yummy chewy slice that you can pull together in 15 mins plus 20 min baking time. Good for lunch box, morning teas. I used to bake it all the time when Elena was little and forgot about it. I'm hugely into my coconut at the moment - must be the Pacific thing obviously..." - Samara Vanderwal.

1 cup self raising flour
1 cup chopped pitted dates
1 cup desiccated coconut
1 cup sugar
pinch salt
125g melted butter
1 egg beaten
Vanilla (this is not in the recipe but I seem to always throw it in because i love it..)
 

Preheat oven to 180°C. Grease a slice tin.
Mix all ingredients, press into tin and bake for 20-25 mins.

Let cool in tin a little before turning out and cutting into pieces.

voila!

Makes 40 peices
