Sesame ginger soba noodles with salmon

I love this healthy, flavourful recipe - a great midweek one, but also one that can be doubled and tripled for an easy, make-ahead dinner party. Everything can be prepped well in advance and thrown together in a bowl to serve last minute. Originally recipe includes a fillet of smoked or cooked salmon, however it stands alone as a vegetarian dish and would easily suit any additional protein you like as I have noted below.

Another great cuzzy recipe provided in a booklet for my birthday.

1 trout/salmon fillet smoked, or bake a fillet in the oven or frypan

1 broccoli head

1 tbsp sesame oil

1 tbsp tamari/soy sauce

90g soba noodles or 4-5 cups zoodles

1 cup cooked edamame beans (can find in freezer section, cook in boiling water for 5 minutes)

1 spring onion, sliced

1 cup coriander leaves, washed and picked to remove thick stalks, plus extra for the top to serve

Handful sesame seeds

Dressing-

20g fresh ginger

1 tbsp tamari sauce / soy sauce / coconut amino sauce 

2 tbsp sesame oil

1 tbsp honey 

1 tsp apple cider vinegar or rice vinegar

1 tsp fish sauce

Optional-

Leave out the salmon/trout - wonderful vegetarian dish as it is

Or swap fish with a chicken breast cooked and shredded

Or swap any protein you would like to add

 

Make the dressing by combining all ingredients in a bowl. Mix until it comes together. Can be made in advance and stored in the fridge up to three days earlier.

Preheat oven to 180 °C degrees.

Cut your broccoli into small pieces and arrange on a lined roasting tray. Drizzle with the sesame oil and 

tamari/soy. Roast for 20 minutes.  You could also have this ready earlier, store in the fridge and bring to room temperature or warm in a pan before serving.

Cook soba noodles according to packet instructions. You can also have this ready earlier and store in the fridge, toss with a little sesame oil to keep noodles separate and prevent drying out. Or prepare your zoodles, these will need to be fresh.

Prepare the coriander, can store in a tub ready.

 

Shred the salmon/trout or chicken etc - can have ready in a container as well.

When ready to serve - Finely slice the spring onion. Have everything ready to assemble.

 

Assemble:

Add everything into a bowl (excluding sesame seeds) and toss until the dressing is distributed.

Top with extra herbs and sesame seeds.
