Turkey Stuffing

Very quick and easy. This is a great stuffing mix for that special turkey this Christmas – it is simple and classic, the pine nuts are perfect. We have used this recipe in the Davies house every Christmas for as long as I can remember, and still love it.

4 cups fresh breadcrumbs
1 onion, diced
3 rashers bacon, diced
125g pine nuts, roasted or unroasted
½ cup fresh herbs – any combination will work, our favourite is thyme, oregano/marjoram, rosemary and a little parsley
30g butter, melted
Orange juice to bind

Gently fry the onion til soft, add the bacon near the end to cook a few minutes as well.

Fold the onion and bacon mix into the breadcrumbs, adding the pine nuts and herbs.

Stir in the melted butter then slowly add orange juice til the mixture comes together and is the right consistency for handling – i.e. not too dry so it crumbles, just wet enough to be able to stuff the turkey easily.
