Recipe of the Week - Raspberry and Yoghurt Cupcakes

Raspberry and Yoghurt Cupcakes

Raspberries are beautiful right now and great value!

This makes a great big batch, and I love no icing required - perfect if you have a birthday bash coming up or great for lunchboxes.

New Recipe! Apple Fritters for a Junior Cook

Apple Fritters for a Junior Cook

These were made by my daughter and she loved having her first solo cook in the kitchen.

The recipe is from my first ever kids cookbook, the Junior Cook. It's such a great cookbook!

Ahh memories..

This is where my pikelet recipe is from all those years ago..

New Recipe! Yoghurt and Raspberry Cake with Elderflower Syrup

Yoghurt and Raspberry Cake with Elderflower Syrup

The best picnic cake!

It gets even better the next day as the syrup fluffs up the cake, it holds its shape so well so very transportable, and the vibrant raspberries are perfect right now.

Great for lunchboxes too.

Recipe by Matthew Evans in his Summer on Fat Pig Farm cookbook.

New Recipe! Kale Salami and Cheese Quesadillas

Kale Salami and Cheese Quesadillas

I made this for a snack to keep us going on Christmas Day as we cooked for the big feast, and everyone said I had to share this recipe it was so good!

Is basically a Mexican toastie, so you can tweak the fillings to anything you love, as long as there is some gooey melted cheese to hold it all together.
