Raspberry and Coconut Muffins

“This is the best muffin recipe! it should go on your site.” – Kyla Davies. Recipe provided by Adelin Moir who recommends doubling the amounts for the best result and suggests using any fruit or berries you like.

1 ½ cups plain flour
2 tsp baking powder
2/3 cup sugar
½ tsp salt
1/3 cup desiccated coconut
100ml sunflower oil or other vegetable oil
1 egg
150ml coconut milk – I like to use the powder by Ayam as recommended to me an Indian store owner
150g raspberries (or any fruit)

Preheat oven to 180°C.

Combine dry ingredients in one bowl, combine wet ingredients (except fruit/berries) in another and mix in.

Fold in fruit.

Bake for 20-25minutes (until skewer comes out clean when tested)

Makes 12
