Zucchini Slice 

A satisfying and healthy snack, or served as a side dish if straight from the oven as we did on first try. Is close to a frittata with the eggs, yet a lighter version because of the flour, and the bacon adds a great flavour to the vegetables. A good way to get kids to eat their greens, and you could vary the ingredients with other vegetables, particularly the ones that grate well etc.

1 medium onion, chopped fine
3 rashers bacon chopped
1 grated carrot
375g grated zucchini
1 cup grated cheese
5 eggs beaten
1 small cup self raising flour
½ cup olive oil

Preheat oven to 180°C.
Sauté onion and bacon. Combine with other ingredients.

Spread evenly in a slice tray or shallow dish and bake for 30 - 40 minutes.

Serve warm or cold.

Makes 15 squares

TasteTip - There is a dish called 'kookoo' originating in ancient Persia where beaten eggs are mixed with chopped herbs, fried until firm and sliced to serve. Once it travelled to Western Europe via the Middle East and North Africa, each country adapted the recipe to produce Italian frittata, Spanish tortilla and the French omelette.
