Auntie Ngaire's Fudge Slice

A great fudge recipe – is hard to stop eating it! You must keep some biscuit pieces large as it adds to the texture so well. So easy too. A good cocoa makes it even richer and better. This one was devoured by all, including work mates asking for another batch! To note-  Ngaire is pronounced "Niree".

500g (2 pkt) plain vanilla biscuits (e.g. Arnott’s Arrowroot) crushed with rolling pin - when crushing biscuits do not crush too finely, a mixture of crumbs and small biscuit bits works best
2 eggs
2/3 cup sugar
250g butter
1 tbsp cocoa
¼ tsp vanilla essence

Icing-
1 tsp cocoa
1 cup icing sugar
A little water to mix
1 – 2 tbsp butter

 
Melt butter in pot over slow heat.
Add eggs and sugar and heat but take care not to scramble the eggs.
Sift in cocoa.
Add vanilla essence.
Take off heat and quickly mix in biscuits crumbs so biscuit is moist with wet ingredients.
Press into slice tin and put in fridge to set.
Icing –
Mix all ingredients except butter til makes a smooth but thick icing. Whip in softened butter.
Spread chocolate icing over slice. Cool in fridge, and then slice into pieces.
