Banana Cake

I never fret when bananas are starting to ripen as it is a great excuse to whip up this cake - it is easy and tasty - kids love it and you feel good for not throwing away perfectly good over ripe bananas.

125g softened butter
¾ C sugar
2 tbsp milk, warmed
2 eggs
2 cups mashed banana
1 tsp baking powder
1 tsp baking soda
2 cups flour

Preheat oven 180

Cream butter and sugar; add eggs one at a time, beating well after each.

Add bananas.

Stir the milk and soda together, add to mix.

Sift in flour and baking powder. Fold in gently.

Bake 50 minutes - test cake is ready by inserting a skewer, if it comes out clean the cake is ready, make sure not to overcook this cake as it can get dry - when I accidently do this I add icing, either a cream cheese or chocolate icing - refer to the Carrot Cake or Rich Chocolate Cake recipes. 

Serves 8- 10

TasteTip - To cream and beat a cake completely in a food processor - mix eggs and sugar first,  then add the butter, follow with remaining ingredients. Be careful not to over-mix.
