Twice Baked Cheese Souffle with a Parmesan Cream Sauce

Straight from a chef who worked at the Blaxlands Restaurant Hunter Valley years ago - I finally found the recipe again and cooked it.

It is so wonderful it will be one of the courses for a special birthday dinner coming up.
