Carrot Cake with Cream Cheese Icing

It's a big birthday time in our family and this is a special cake for those moments

Make sure to whip the oil for at least 5 minutes so you can achieve the velvet texture that lifts it to something wonderful.

After trying many recipes this was the winner!
