Cooked over Easter and many requests for the recipe. Here it is!
Slow roasted or braised lamb shanks are shredded back back into a rich soup of stock and vegies, then pearl barley added for texture.
Yum!

Vichyssoise Soup aka Potato and Leek
Leeks are on special at Harris Farm this week so I had to make this velvet smooth, delicious soup.
Just follow the weights correctly to get a nice balance between the potato and leek, it needs a little bite to it.
Too easy!
