A wonderful way to enjoy figs in season.

A quick yet delicious entrée for as little as the 2 of you to as many as you need - just multiply the ingredients as they all bake together in the oven.

New Recipe! Vegetable Strudel

Layers of haloumi, roasted capsicum, eggplant and zucchini/artichokes, pesto - whatever your favourite combination of flavours, rolled up in a filo parcel for slicing.
I love this with the jalapeno sauce from the sliders recipe too.
Make this quick and buy the ingredients ready-roasted from a deli, or have jars stored in the pantry ready for a beautiful vegetarian meal last minute.

Sliders - Mini Beef Burgers with Jalapeno Sauce

These are delicious!

Too easy to make at home and were a big hit for our movie night on the projector screen served with crispy roast potatoes.

The jalapeno sauce is a staple for the fridge now, great on filo parcels, cheese toasties, a simple steak - too easy to whiz together in a blender. You will find jars of pickled jalapenos in most supermarkets now.

Served as nachos this ticks a lot of boxes for me - a great chilli hit, satisfying crunchy corn chips, comforting sour cream dollop, plus a healthy vegetarian meal that makes enough for me to freeze a little for later.

Meatballs Baked in Passata

I cooked this last night and yet again it is still my favourite meatball recipe- they are so good!

Great balance of flavours, and a good one to prep in advance and bake for the 40 minutes before serving time.

Easy steps where you don't need to precook onion etc, and the frying is quick as you are browning rather than worrying about them being cooked through as they will have that final bake in the oven.

We had it with macaroni as well which was surprisingly a great combo, especially as I had rolled fairly small, bite-sized meatballs.

You could double this recipe and freeze some portions too.
