Spicy Chicken Wings with Cajun Spice Rub

These are great for a cocktail party or for a relaxed gathering, like watching footy/sport on TV.

They are a crowd-pleaser for sure.

Based on a recipe by Silvana Franco from the UK cooking show and book - "The Best".

12-16 chicken wings
4-6 tbsp plain flour
4 tsp Cajun spice rub, see recipe below if you would like to make your own
3 tsp smoked paprika, or paprika
1 tsp salt

Cajun Spice Rub
2 tbsp dried oregano
2 tbsp dried thyme
1 tbsp ground cumin
1 tbsp sweet paprika
1 tsp ground cayenne
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp black pepper
1 tbsp white pepper

Preheat the oven to 200 °C/400°F/Gas Mark 6.

Cut the tip off each wing with either a sharp knife or scissors.

In a large plastic zip-lock bag or a large bowl mix together the flour, spices and salt. Throw in the chicken wings and coat in the mix.

Place wings on a wire rack on top of a tray with a baking sheet, roast 25-30 minutes until crispy.


Serves 6 - 8
