Spanakopita - Greek Spinach and Feta Pie
This a great vegetarian family meal, although you can make the filling and roll into little parcels and freeze for later too.
I like to make a mix of little filo snails and some parcels with puff pastry.
When short of time though I make one large pie dish.

Strawberry Pink Peppercorn Mascarpone Cheesecake
Amazing cake. Amazing.
Based on a Karen Martini recipe in the Good Food SMH section that looked too good not to try.
A few steps to it, none are too tricky, but you do need a food processor.
Has wow factor - so was last made for a friend's 40th!

Cooked and devoured over the school holidays down the south coast - this is a true family favourite and tradition whenever we go there.

A good one for school holidays as the kids love them! Let alone haloumi is super high in calcium for those needing a boost.
Make small ones so they are cooked through and crunchy.

Roasted Chicken with Garlic and Lemon
Based on a recipe in the Jerusalem cookbook by Yotam Ottolenghi, I have simplified it a little and importantly kept the wonderful cooking method for tender chicken with beautiful crispy skin.
